About
Soybean is the world's most important legume, valued for its exceptionally high protein and oil content. It is being increasingly promoted in PNG as a high-protein food crop and soil improvement crop. Soybeans fix nitrogen, making them excellent rotation crops. They can be eaten fresh (edamame), dried, or processed into milk, tofu, and tempeh.
Health Benefits
Highest protein of any legume (35-40%). Complete protein with all essential amino acids. Rich in isoflavones, iron, calcium, and B vitamins. Soy oil provides essential fatty acids. Supports bone health and cardiovascular function.
Market Requirements
Dried beans should be clean, uniform, and properly dried to 12% moisture. Fresh green pods (edamame) should be bright green and plump. Processed products (tofu, soy milk) have growing urban demand.
