About
Mung bean is a fast-growing, drought-tolerant legume suited to PNG lowland conditions. It matures in just 60-75 days, making it one of the quickest protein crops available. Mung beans are eaten as whole beans, split dal, or sprouted (bean sprouts). The crop fixes nitrogen and improves soil, making it an excellent rotation or intercrop.
Health Benefits
High in plant protein (24%), dietary fibre, folate, manganese, magnesium, and vitamin B1. Mung bean sprouts are rich in vitamin C. Easy to digest compared to many other legumes. Low in anti-nutritional factors.
Market Requirements
Dried beans should be clean, uniform green, and properly dried to 12% moisture. Sprouts should be crisp, white, and fresh. Sell dried beans in 500g-1kg packs.
